description
Turn your leftover Christmas ham into the best lunch of the holidays. Our freshly baked baguette, split and spread with softened butter and Dijon, is layered with shaved ham, nutty Manchego, peppery rocket and our tangy zucchini pickles, then finished with a crack of black pepper. It’s simple, quick and made for Boxing Day.
Slice lengthways and lightly toast the cut sides if you want extra crunch. Mix the softened butter with the Dijon mustard and spread generously inside.
method
Slice the baguette lengthways, leaving one edge attached so it opens like a book. For extra crunch, lightly toast the cut sides in a hot pan or under the grill.
Mix the softened butter with the Dijon mustard and spread it generously over both cut sides.
Loosely fold or ruffle the ham slices instead of laying them flat. This adds height and texture to every bite.
Shave the Manchego into thin slices with a vegetable peeler and tuck them between and over the ham.
Pat the zucchini pickles dry with paper towel so the bread doesn’t go soggy, then layer them over the cheese.
Top with a handful of rocket and a good crack of black pepper.
Press the baguette closed and slice it into portions to serve cold. For a warm version, toast it in a sandwich press until the Manchego softens and the crust turns golden.
